Aussie Butterbeer (Harry Potter-style)

A simple Australian take on Harry Potter-style butterbeer using ingredients available from Woolworths or Coles.

Ingredients

  • 330 ml ginger beer, chilled (or creaming soda for a milder, more Universal-style flavour)
  • 2 tbsp butterscotch or caramel dessert sauce (Barker’s, Queen or Cottee’s), plus extra for drizzling
  • ΒΌ cup thickened cream, whipped (or squirty cream)

Method

  1. Spoon the butterscotch or caramel sauce into the bottom of a tall glass.
  2. Pour in the chilled ginger beer (or creaming soda) and stir gently to combine. Avoid over-stirring so the drink stays fizzy.
  3. Top with the whipped cream and drizzle with a little extra butterscotch sauce.
  4. Serve immediately.

Notes

  • Ginger beer gives a spicier, more grown-up flavour.
  • Creaming soda (such as Bickford’s or Schweppes) produces a sweeter, vanilla-forward drink that’s closer to the Universal Studios version.
  • Sugar-free ginger beer and sugar-free butterscotch topping both work well if you prefer a less sweet drink.
  • For an adult version, add a nip of butterscotch schnapps.
  • This recipe scales easily for parties.
  • Best enjoyed immediately while the drink is still fizzy.
